Preparing healthy dishes doesn’t have to be difficult or time-consuming, instead they! It’s always a good idea to eat a lot of healthy proteins, fiber, carbs, work as a superfood, help in weight loss and keep you full besides increase your metabolism. A meal with beetroots can be great for health, it only it helps lower blood pressure, prevents cancer, provides antioxidants, improves stamina, provides potassium and minerals. Well, don’t we all love ideas which will please the entire family, be it the kids, parents, in-laws or beau! Expert Chef Pawan Bisht gives us two delicious beetroot recipes to revel in the season’s best.

Beetroot Gazpacho

Preparation time: 40-45 minutes
Cooking time: 15 minutes
Servings:4

Ingredients:

  1. 4 medium beetroot
  2. ½ cup diced onion
  3. 3 garlic cloves
  4. ½ cup fresh bread crumbs
  5. 2 peeled and diced cucumber
  6. 1 tea spoon fresh dill leaves
  7. 1 table spoon red wine vinegar or lemon juice
  8. ¼ cup extra virgin olive oil
  9. Salt to taste
  10. Pepper to taste

Method:

  1. Place the beetroot in a pan with water and cook till fork tender.
  2. Once the beetroot are done peel their skin off. Cut them into quarters.
  3. Take a blender, add all ingredient and blend till smooth.
  4. Adjust seasoning and consistency with the water or stock.
  5. Place in the refrigerator until ready to serve.

Red Wine Poached Beetroot and Fruit Salad

Preparation time: 15 mins
Cooking time: 15 mins
Serving: 2

Ingredients:

  1. 4-5 red wine poached thinly sliced beetroot
  2. ½ cup washed and dried arugula leaves
  3. 2 hand full mixed lettuce (lollorosso, green leafy, iceberg)
  4. 4 tablespoon fresh lemon juice
  5. 2 tablespoon organic honey
  6. 2 tablespoon olive oil
  7. 5-6 pieces of strawberry or any seasonal fruit
  8. Salt to taste
  9. Pepper to taste

Method:

  1. Take a bowl and blend olive oil, honey, lemon juice, salt and pepper thoroughly.
  2. Cut strawberries into half and set in the fridge.
  3. Meanwhile in a mixing bowl add the dressing and the lettuce. Toss it well.
  4. Place the dressed lettuce in a plate along with the wine poached beetroot and strawberries.
  5. Place the wine poached beetroot and serve.
