Sprinkles for garnish

INSTRUCTIONS

Cut the watermelon in 1 inch wide round slices.
Cut circles using a circle cookie cutter and place on a tray.
Mix Greek yogurt with water to loosen it a bit. It should be creamy but thick enough to be piped on the watermelon bites.
Add in honey and mix well.
Transfer sweetened yogurt in a pastry piping bag and pipe about 1 tablespoon of it onto each bite.
Refrigerate the bites for about 15 minutes.
Garnish with sprinkles before serving.

Ingredients

4 Cups of boiling water
2/3 Cup of freshly squeezed lemon juice
1 1/2 Cups of Granulated Splenda Sweetener
1 Tablespoon grated lemon zest

Instructions

Dissolve the splenda with the boiling water. Cool slightly.
Add the lemon juice and lemon zest.
Put the mixture in a shallow pan and freeze.
Scrape the lemon ice with a fork and put into a resalable container. Serve with fresh mint.

Cinnamon Oat Baked Apples

Ingredients:

4 apples
1/2 cup oats
1/3 cup pecans (optional)
3 tbsp brown sugar
1 1/2 tbsp greek yogurt
1 tbsp butter, melted
1 tsp cinnamon
3 tbs apple juice
Whipped cream

Instructions

Preheat oven to 350. Combine oats and pecans with a sprinkle of cinnamon. Spread out on a baking sheet in a thin layer and bake for 4-6 minutes until golden and toasted. Remove and set aside.
Reduce oven temp to 325.
Rinse and core the apples, but make sure not to cut through the bottom of the apple. You can use an apple corer or a paring knife. Make sure seeds are removed as well (scoop out with spoon)
In a bowl combine oat-pecan mixture with brown sugar, yogurt, melted butter and cinnamon.
Spoon mixture into the cavity of each apple. Place apples in baking dish.
Pour apple juice in the bottom of dish.
Bake at 325 for 30-40 minutes until tender (not mushy).
Top with whipped cream or ice cream and serve.

Dark Chocolate Detox Bites

Ingredients
250 gms dark chocolate
300 gms Assorted dried fruits, chopped nuts, and seeds

INSTRUCTIONS

Lay out a piece of parchment paper, or waxed paper, or foil.

Chop the chocolate into small pieces and put in a microwave safe glass measuring cup.

Microwave for 60 seconds, and then stir. Microwave for another 30 seconds, and then stir again to completely melt the chocolate. If there are still lumps, microwave for another short burst and stir again.

Use a spoon to make small rounds of chocolate onto the parchment paper. Let the chocolate fall from the spoon and it will naturally form a more or less round shape.

Work with one at a time, and sprinkle each round of chocolate with an assortment of your healthy add-ins while the chocolate is still hot.

Let the chocolate set at room temperature, or put the bites in the refrigerator to speed things up.

Place the chopped dry fruits and nuts on the chocolate to form random patterns of colorful fruits, nuts, and seeds as they sink into the warm surface.

Your enjoyment of each crunchy, chewy, chocolaty bite will be heightened even further with your healthy glass of red wine to go along with your bites
