Fitalicious Cakes


Valentine’s day is round the corner, time to go feast right? However, folks avoid the sugar festival this year. If your special someone or your kids like cakes and you want to give your home-made cakes a healthy twist so they can indulge guiltlessly, we have got you covered! Show them how much your care with one of these healthier cake treats instead of the usual sinful fare. Give your loved ones gift of taste and health this Valentine’s week. Decadent, moist and fluffy define these nutritious home baked cakes. Healthy cakes anyone? Go whip up your own!

Interestingly, all these cakes are 140 calories, sans the icing or glaze while normal chocolate cakes have around 400 calories.

Whole wheat Carrot and Date cake

1. Carrots (1 cup grated)

2. Dates (1 cup seedless)

3. Eggs (3)

4. Vanilla(1/2 tbsp)

5. Baking powder(1/2 tbsp)

6. Whole wheat flour ( 5 tbsp)

7. Vegetable oil (2 tbsp)

For decoration

1) Powdered sugar(2 to 3 tbsp)

2) Egg white (1)

1. Grease a baking pan

2. Strain whole wheat flour and baking powder in a bowl.

3. Chop finely and Soak the dates in 1/2 cup milk for 10 minutes and m0ash them

4. Separate and beat the egg whites till stiff.
5.Add the dates with milk and beat for 1 minute

6. Add egg yolks and vanilla and oil to it and beat again.

7. Fold the flour into the wet mixture with a ladle and mix nicely until it forms a smooth mixture.
8. Mix ,don’t beat.

9. Add the mixture in the baking pan.

10. Bake for 30 minutes in a preheated oven or microwave.

1) Paint the top of the cake with egg white and sprinkle powdered sugar.

2) Grill the cake in oven or microwave for 10 to 15 minutes at  150 degrees, till sugar is caramellized. 

3) Just cut and serve with tea, coffee or whatever. Your guests will be impressed 🙂

Oats and Dates No Sugar Chocolate cake

For 1/2 Kg Cake

1. Oats natural(Grounded in grinder coarsely) 5 tbsp

2. Milk (1 cup)

3. Dried dates (4 to 5 )grounded or black seedless dates (4 to 5) soaked in little milk and mashed

4. Chocolate (dark ) 100 gm

5. Baking powder (1/2 tbsp)

6. Vanilla(1/2 tsp)

7. Eggs(3)

8. Vegetable oil(1/2 tbsp)[optional]

9.Unsweetened cocoa powder (3 tbsp)


  1. Take a 1/2 kg cake mold and apply butter on it. Then sprinkle flour to prevent the cake from sticking to the mold.

  2. Press the convection button on your microwave and adjust the temperature to 170 degrees  and press the start button. It will give out a beep sound once your oven in preheated. If your oven have the option to give time, preheat for 3 minutes or preheat the OTG to 170 degrees for 10 minutes.

  3. In the meantime separate the egg whites from the egg yolk and beat it with a beater until stiff.

  4. Add vanilla to the egg yolk.
  5. Soak the oats in just enough milk to form a thick paste and keep for 5 minutes.
  6. Strain and add the baking powder and cocoa powder to the oats and mix.
  7. Add the  egg yolks to the egg whites and blend now with beater.
  8. Melt the dark chocolate in the microwave for 40 second micro option and beat with a spoon to melt it completely.
  9. Now add the dates to egg yolk and beat for a minute till it forms a smooth paste.
  10. Add the molten chocolate now and beat.
  11. And finally add the oats mixture to the eggs little by little and beat unless and until the mixture is smooth and fluffy.
  12. The mixture can be dry ,add milk little by little and beat until it reaches the desired smooth and thick but pouring consistency.
  13. Add this mixture into your mold and tap to spread the mixture evenly in the mold
  14. Adjust the time now to 30 minutes ,170 degrees in convection mode. After 25 minutes check the cake once by pricking with fork. If it comes out clean take it out and plate it.

Apricot Chocolate Whole wheat Cake

1) 12 to 15 apricots(Dried)
2) 100 gm of whole wheat flout
3) 1/2 tsp of baking soda.
4) 1 tsp of baking powder
5) Coffee powder 1 tbsp
6) Sweetened Condensed milk(400 gm)
7) Salted butter(100 gm)
8) Milk (100 ml)
9) Sugar (10 to 12 tbsp) powder
10) Vanilla essence (1/2 tsp)
White Chocolate Glaze:
1) 1 cup of molten white chocolate
2) 1/2 cup of milk


  1. Measure and strain the dried ingredients and preheat the oven at 170 degrees.
  2. Grease the cake mold and keep aside.
  3. Beat the butter with the beater till soft.
  4. Add sugar and beat.
  5. Add condensed milk and vanilla and beat for to 5 minutes till fluffy.
  6. Add flour mixture and beat for 7 to 8 minutes.
  7. Grind some apricots in the grinder and mix with  cake mixture
  8. Line the cake mold with whole apricots.
  9. Add the cake mixture on it and tap.
  10. Bake it for 35 to 40 minutes at 170 degrees till the fork comes out clean.
  11. The middle of the cake may be little wobbly, dont take out the cake from the mold hot.
  12. Allow to cool after that in refrigerator  for  15 to 20 minutes.
  13. Top with white chocolate glaze and sprinklers and serve.

Wheat Plum Cake Topped with Plum Jam

For 1/2 kg cake

  1. 5 tbsp of whole wheat flour
  2. Butter 2 tbsp
  3. 1/2 tsp baking powder
  4. Sugar 5 to  8 tbsp
  5. EGG(3)
  6. Vanilla(1/2 tsp)
  7. Plum (3 to 4) chopped

For topping 1 plum
1) Lemon juice 1/2 tsp
2) All spice powder(cinnamon ,cardamom and cloves)ratio(2:2:1)


  1. Strain flour and baking powder.
  2. Separate the egg whites.
  3. Beat the egg   whites till soft peaks don’t form.
  4. Add sugar and beat.
  5. Add vanilla and butter to the egg yolk.
  6. Add this mixture to the egg white and beat.Don’t over beat.
  7. Now with a spatula fold the flour mixture to the egg.
  8. Add chopped plum and spices and stir to form a smooth batter.
  9. Pour this batter to the greased mold and bake in a preheated oven for 30 minutes at 170 degrees.
  10. Meanwhile you can make the topping.
  11. In the pan add 3 to 4 tbsp of sugar and caramelize.
  12. Add the chopped plum and stir till it completely becomes tender.
  13. Add 1/2 tsp of lemon juice and mix.
  14. Take out the cake and spread the plum jam while the cake is hot.
