Easter Weekend Feast

Asian style roasted chicken with pan roasted potatoes

Ingredients:

Method:

  1. Pre heat the oven at 200 degrees for minimum 20 minutes.
  2. Clean the whole chicken dry it with the kitchen towel, Season the cavity and insert the spring onions, ginger, garlic, star anise.
  3. On outside of chicken, rub Chinese 5 spices, oil, salt and pepper.
  4. Place it on a roasting tray, and roast for 40 minutes.
  5. Prepare the roasted potatoes, Scoop out the potato balls out of the potato or just chop the potato roughly. Boil them for 3-4 minutes.
  6. Heat olive oil in a pan, add garlic, ginger and dried red chili, add the potatoes sauté them till light golden colour, add spring onions, soy sauce, sesame seed oil, honey, lime juice, salt and pepper. Potatoes are ready.
  7. Check on chicken, to know IF its ready insert a fork around the LEG, if it penetrates easily then chicken is ready.

  1. Strong, all-purpose flour 500g
  2. Salt 2 tsp
  3. Dry yeast 7g
  4. Olive oil 80 ml
  5. Warm water 200ml
  6. Rosemary
  7. Salt

Method:

  1. In a big bowl, add flour, salt, yeast, olive oil, warm water to make soft dough. Cover the dough with cling film or damp cloth and keep to rise in a warm corner of your kitchen for around half an hour.
  2. Pre heat the oven at 200 degrees for around 20 minutes.
  3. After your dough is doubled in size, take it out in a baking tin.
  4. Spread it according to the shape and size of baking tin. Then press holes in the dough with the help of your finger around 3 cm apart, across the dough. Plug in the rosemary leaves in the holes, you can also use, olives or sundried tomatoes.
  5. Drizzle over lots of olive oil. And bake for 25-30 minutes.
  6. After its golden brown on top, take it out of the oven, and leave it to cool for minimum 15 minutes, inside the tray itself.
  7. Then just cut it and enjoy with some gremolata.
