MIXED SALAD WITH LOTUS ROOT


INGREDIENTS:
* Lotus root
* Carrots
* Lollo rosso Lettuce
* Romaine Lettuce
* Iceberg Lettuce
* SEASONING: Lemongrass dressing
METHOD:
* Clean and wash lettuce, dice it. 
* Mix all ingredients in a bowl, add lemongrass sauce. 
* Portion in a salad bowl. 

CORN, POMEGRANATE & SOYA SALAD

INGREDIENTS:

  • Shredded Cabbage- 2 Cups
  • Soya granules (Boiled) 1 cup
  • American Corn 1/2 cup
  • Pomegranate 1/2 cup
  • Salt According To Taste
  • Pepper According To Taste
  • For Dressing:
    * Olive Oil- 2Tsp
    * Lemon Juice- 1 Tbsp

    Method:
    * In a bowl mix all the ingredients except olive oil and lemon juice.
    * Add the dressing and toss well 
    * Tips: You can add nuts if you want to make your salad more crunchy. They will also add more protein to the salad.

    ROASTED PUMPKIN AND CHICKEN SALAD


    INGREDIENTS:

    1. Pumpkin 100g (cubes)
    2. Salt & Pepper
    3. Worcestershire sauce 1 tsp
    4. 

Chicken Leg boneless 100g
    5. Black pepper sauce 2 tbsp
    6. Assorted lettuce 100g
    7. 10 Cherry tomatoes
    8. Toasted almond flakes 1 tbsp
    9. Lemon juice 1 tsp
    10. Honey ½ tsp
    11. Diced bell peppers 2 tbsp
    12. Olives slices 1 tbsp

    Method:

    1. Marinate the chicken meat with salt and black pepper sauce leave aside for 30 mins.
    2. Bake at 150 degrees for 45 mins.
    3. Mix all ingredients and bake in the oven for 15 mins at 200 degrees Celsius.
    4. Do not throw the pan juices.
    5. Make a bed with the washed lettuce.
    6. Arrange halved tomatoes , olives and bell peppers.
    7. Place the pumpkin on the salad , slice the chicken and add to the salad.
    8. Whisk the chicken pan juices , honey and lemon juice to form a dressing.
    9. Pour over the salad, and finish with almond
