Dough Doughnuts

Dough Doughnuts


  1. Flour 500g
  2. Sugar 80g
  3. Yeast 40g
  4. Butter 120g
  5. Eggs 2
  6. Egg yolk 3
  7. Vanilla essence 2 tbsp
  8. Lemon zest 2
  9. Warm milk 100g
  10. Salt 10g

* Mix yeast and sugar along with warm milk and allow it to bloom.
* Add this to flour and add all the rest of the ingredients.
* Allow it to proof.
* Once proved dock back the dough.
* Allow it to proof one more time.

Red Velvet Cup Cakes

Red Velvet Cupcakes


  1. Butter- 450 gm
  2. Castor Sugar- 1000 gm
  3. Butter milk – 960 ml
  4. Vinegar – 20 ml
  5. Flour – 1000 gm
  6. Coco powder- 60 gm
  7. Eggs – 8 each
  8. Baking soda- 15 gm


  1. Beat butter and sugar in large bowl with electric mixer on medium speed 5 minutes or until light and fluffy.
  2. Beat in eggs, one at a time. Mix in cream, milk, food color and vanilla.
  3. Gradually beat in flour mixture on low speed until just blended. Do not over-beat.
  4. Spoon batter into paper-lined muffin cups, filling each cup 2/3 full.
  5. Bake 20 minutes or until toothpick inserted into cupcake comes out clean.
  6. Cool on wire rack. Remove from pans; cool completely.
  7. Frost with Vanilla Cream Cheese Frosting.

Vanilla Cream Cheese Frosting:
* Beat cream cheese, softened, butter, sour cream until light and fluffy.
* Gradually beat in confectioners’ sugar until smooth.
