Get Pie-ed this National Pie Week!


British Pie Week has begun, get out the dough, gravy and roll out the pastry folks. Don’t we all love a pie, which arguably is one of the most versatile food known to mankind. The humble pie is also a comforting classic, so you could have it for any meal in your day. All you pierateers, get set as we give out a few interesting pie recipes using tasty fillings which you can customize in all shapes, sizes and added flavors.

Indrani Sen, Mumbai’s Food Expert & Blogger (Indrani Will Teach) gives us two wonderful pie recipes to start the pie week.

Chocolate Pie With Meringue


* 2 and 1/2 cups of refined flour

* Salt as per taste

* Butter (100 gm) frozen

* Chocolate dark or milk (1 cup)

* Fresh cream (1/2 cup)

* Vanilla (1/4th tsp)


1.Egg whites (4)

2.Sugar(1/2 cup)

3.Vanilla (1/4th tsp)

1. Add the butter and salt to the flour and mix till the mixture is crumbly.

2. Add 1/4th cup water, minimum to form a tough and firm dough.

3. Keep the dough refrigerated for 1 hour.

4. Divide the dough into two equal portions and flatten to form a circular disk.

5. Layer the disk on a greased cake pan and bake for 20 minutes. Add some dried beans on the crust during baking

6. Add the cream to the molten chocolate and mix. Micro it for 20 seconds. Add vanilla and mix.

7. Add this filling to the bottom crust.

8. Flatten another part of the remaining dough and cover the pie sealing the two top and bottom layers .Make some design with fork.

9. Bake for another 20 minutes.

10. For the meringue beat the egg whites till peaks don’t form.
11. Add grounded sugar and beat.

12. Put the frosting into an icing bag and decorate with a star nozzle.

13. Bake for another 10 minutes, till the top is little golden.

14. Drizzle some strawberry sauce and serve with vanilla ice cream.

Mini Chicken Pie With Minced Chicken and Spinach Filling

*Makes 10 to 12 mini pies crispy outside and soft meaty and cheesy inside.*



* 2 and 1/2 cups of refined flour

* Salt as per taste

* Butter (100 gm) frozen

* Minced chicken (200 gms)
* Onions (1 cup)
* Ginger garlic paste (1 tbsp)
* Crushed and minced garlic (1 tbsp)
* Celery chopped a handful
* Spinach chopped (1 cup)
* Green chilies (2 to 4 chopped)
* Parmesan cheese (1 cup grated)
* Black pepper (1 tsp)
* Fresh cream (1 cup)
* Corn flour (2 tbsp)
* Butter (1 tbsp)

* Making the filling
* Heat a tbsp of butter in the pan.
* Fry onions.
* Add ginger garlic paste and fry.
* Stir in some celery and spinach leaves.
* When they lose the rawness add chicken and salt.
* Cook until the mixture loses all water.
* Add cream and corn flour and stir slowly to form a nice sauce.
* Top with green chilies and black pepper.
* Set aside for cooling.
* Making the crust
* Make the pie dough as mentioned in the above recipe.
* Roll the dough into a thin circular disk and cut medium sized rounds from it.
* Grease the muffin cups and line the inner side of the cups with the circular discs.
* Fill them with dried beans to prevent puffing up.
* Bake them in oven for 20 minutes at 180 degrees.
* Assembling the pie
* Take out the cups.
* Fill them with two spoons of filling.
* Top with grated cheese.
* Cut out ribbons from the remaining dough.
* Cover the top of the pie.
* Bake for another 15 to 20 minutes.
* When the top become golden brown, take out, let it cool on a rack and serve.
