Valentine’s Day Recipes By Chef Tarun Sibal, Director, One Fine Meal

Rose and Pistachio Kulfi or (Popsicle)

Valentine's Day, Cooking, Food Ingredients:

  • Milk 1 Litre
  • Sugar 200 gms
  • Fresh Rose Petals
  • Gulkand
  • Pistachios


  1. Cook 1 litre of Milk on slow fire
  2. Add 200 gm of Sugar and simmer it till the liquid becomes half
  3. Add Fresh Rose Petals to this liquid
  4. Reduce further down till the consistency is thick and it turns into a lovely Pink hue
  5. Strain it and add a Spoon full of gulkand (Sugar Macerated perfumed Rose petals)
  6. Cool it and freeze it kulfi Moulds overnight
  7. Use warm water to de mould it
  8. Finish with sliced and blanched Pistachios and fresh rose petals

Coffee and White Chocolate Kulfi Fudge

  • 200 gm full Cream Milk
  • 200 Gm Double Cream
  • 200 condensed milk
  • 200 Gm White Chocolate
  • Coffee Beans 200 gm
  • Brownie – 1 pcs


  1. Boil the milk and cream together; add coffee beans
  2. Let it Sit for 3 hours so that the coffee could impart its flavor
  3. Strain the liquid and put it on medium flame , and add milkmaid
  4. Reduce it to half and add the 190 gm of the chocolate (10 gm keep for garnish)
  5. As soon as the chocolate get dissolved cool the mixture and add it to kulfi moulds
  6. Freeze it for 5 hours
  7. To Serve De mould it and serve it with white chocolate shavings and hot brownie

Chocolate, Cardamom and Chili Semifredo with seasonal fruits

Valentine's Day, Cooking, FoodIngredients:

  • Dark Chocolate 300 gm
  • Double cream 300 gm
  • Cardamom Powder – 1 gm
  • Chili flakes – 1 gm


  1. Melt the chocolate on a double boiler
  2. Whip the cream till soft peaks
  3. Fold the cream in the chocolate
  4. Add the cardamom powder and chill flakes
  5. Put it into a serving glass, and cover it with a shrink wrap
  6. Chill it for 4 hours, and finish it with seasonal fruits
